seedlings (citrus seedlings take longer to bear fruits; some citrus
seedlings may never bear fruits). Please

Australian Finger Lime, Caviar Lime, Citrus Caviar

This rare and much sought-after citrus is fascinating with its juice vesicles oozing out of the fruit, like citrus caviar . It can last several weeks when stored in the refrigerator. It is used as a garnish, in upscale cocktails, on sushi, on persimmons, and seafood (oysters, ...). Sprinkle in a salad to replace lime or lemon juice to avoid the moisture (or use in salad dressing for an extra surprise) . It can also be added to soups. The pulp is great in alcoholic and non-alcoholic drinks like beers, gin, tonics, Champagne.

A native of tropical Asia, Kaffir Lime is used extensively in the cuisines in the region. Its essential oil is used in perfumery. Its rind and crushed leaves emit an intense citrus fragrance. The leaves has a distinct shape, like a number '8'. The fruits is rough and green, and ripens to yellow; it is distinguished by its bumpy exterior. The leaves are the most frequently used part of the plant, fresh, dried, or frozen. The leaves are widely used in Thai and Lao cuisine (for dishes such as tom yum) and Cambodian cuisine (for the base paste "krueng"). The leaves are used in Vietnamese cuisine to add fragrance to chicken dishes and to decrease the pungent odor when steaming snails. The leaves are used in Indonesian cuisine (especially Balinese cuisine and Javanese cuisine) for foods such as soto ayam and are used along with Indonesian bay leaf for chicken and fish.
